SUMMER dessert of melon with salsa (for two)

1 ripe cantaloupe SCENTED
2 lemons
2-3 spoons “cashew batter” (cashew butter)
2-3 tablespoons raw honey (or agave or maple syrup)
1/2 cup of wild blueberries
water as required
a bit of sea salt
Bound mint

How to prepare?

Chop the melon in half, cleaned of seeds, dig balls and put them in a separate container. Sprayed them with the juice of one lemon nicely then agree balls back into the empty melon plovine.

Put remaining ingredients (juice of 1 lemon, 2-3 tablespoons of wild blueberries, raw honey, cashew batter or raw cashews, sea salt, water) in a blender and mix to obtain preferred for mass creamy then pour over balls.

Sprayed balls of melon with 2-3 tablespoons of the remaining wild blueberries and add mint leaves.


Variations can be various depending on the opportunities, inspiration and creativity. ‘Cashew butter’ may mixed with fresh walnuts, almonds, cashew, sunflower seeds or pumpkin. Raw honey can be mixed with maple or agave sirup.

It is desirable to always use biological / organic food for better health.
